Each pizza starts with our 72-hour dough, San Marzano tomato base, and whatever caught Marco's eye at the farmers market that week.

We could take shortcuts. We don't.
Our wood-fired oven was hand-built in Caserta, Italy and shipped to Burlington. It runs at 900°F and gives our crust that char no conveyor oven can fake.
We start the dough three days before it hits the oven. Slow fermentation builds complex flavor and a light, airy crumb that holds up under heavy toppings.
We source dairy from Shelburne Farms, vegetables from Intervale Community Farm, and honey from a beekeeper five miles from our front door.
Marco and Elena Vitale opened Hearthstone with one oven and a borrowed folding table. The recipes haven't changed. Neither has the philosophy.
